    ZESTY MAPLE HABANERO SYRUP

    Source of Recipe

    Chile Pepper Magazine

    Recipe Introduction

"Some like it HOT, some like it cold, some like it in the pot, five days old!" If YOU like it hot, this is for you! (and for giving to your heat-loving friends, too!)

    List of Ingredients

    2 cups real Maple Syrup
    1/4 tsp. finely minced Habanero

    Recipe

Place the syrup and minced Habanero in a saucepan over low heat and bring to a simmer. Cook for 1 minute and take off of the heat. When cool, place in your handy little syrup pitcher. Use immediately or can be placed in the refrigerator until ready to be used. CAUTION: When handling hot peppers, use disposible plastic gloves, DO NOT touch any part of your body or clothing, and DO NOT touch anything else that you do not intend to wash in almost hot, soapy water! When removing gloves, turn them inside out as you remove them, and dispose in a manner that small children and pets can NOT come in contact with them. (Gee, this warning is bigger than the recipe, BUT HEED IT because ignoring it can cause great pain, and even damage to sensitive skin, children, and animals!) WASH EVERYTHING that has come in contact with the Habanero pepper! The up side is that you'll end up with a good, but unusual syrup for pancakes, waffles, French Toast, and even over ice cream. If it turns out too hot for your taste, mix in more maple syrup until the desired heat is achieved! (While in Ohio, I ate at an Amish restaurent that served pancakes with a Raspberry - Habanero syrup made the same way. Delicious!)
