PEANUT BUTTER GLAZED CARROTS

A great way to fix carrots for those that don't like carrots!
List of Ingredients
1 lb. carrots (about 6) pared and sliced
1 TBSP creamy peanut butter
1 cup orange juice
2 TBSP butter
1 TBSP flour
1/4 tsp ground ginger
1/2 tsp saltRecipe
Cook carrots in boiling, salted water until tender, drain. Melt butter and peanut butter in a saucepan, remove from heat. Blend in flour, salt, and ginger; stir in orange juice gradually. Cook, stirring constantly, over medium heat, until sauce boils and thickens. Stir in drained carrots, reheat and serve. Makes about 6 servings.
