Skillet Cornbread

Back of the bag of Lamb's Cornmeal
Recipe Introduction
A perfect use for that cast-iron skillet!
List of Ingredients
- 1 cup Lamb's Stone Ground Corn Meal
- 1 cup flour
- 1 teaspoon salt
- 2 eggs
- 1/2 cup vegetable oil
- 2 teaspoons baking powder
- 2 Tablespoons sugar
- 1 cup milk
Instructions
- Preheat oven to 400 degrees F.
- Pout all ingredients in a bowl and mix with a fork until blended (about 50 strokes).
- Pour batter into a greased cast iron skillet. (Mine is the 8 inch and it works perfectly to create a crispy moist cornbread!)
- Place pan in oven and bake 30 - 35 minutes until fully baked. Top of cornbread will be slightly brown and firm to the touch.
- Grab a hunk or butter and slather it on. Mmmmmmmm!
Final Comments
This is great with chili or any soup...especially in the winter.
