Recipe Introduction
This recipe tastes so fresh from the very fresh juice that you have reamed from your very fresh grapefruit.
List of Ingredients
- 1/2 cup fresh grapefruit juice
- 1 clove garlic, chopped
- 2 teaspoons Dijon mustard
- 1 sprig fresh tarragon
- 1 cup olive oil
- salt and pepper
Instructions
- Using a citrus reamer, ream the juice out of your grapefruits. It will probably take 2 or 3 large grapefruit to yield 1/2 cup juice.
- In a medium mixing bowl, combine grapefruit juice, garlic, mustard and tarragon.
- Begin pouring olive oil in a thin, continuous stream to incorporate it into the juice mixture - whisking the entire time. If you do it this way, the dressing will not separate.
- Pour over salad. Eat.
Final Comments
This dressing is FANTASTIC with a lettuce salad containing fresh fruit and toasted nuts.
