Broccoli Soup - NOT w/ VELVEETA

Recipe Introduction
This is a perfect cold weather meal, add some crusty bread and its done!
List of Ingredients
- 1 quart broccoli (I use frozen)
- 2/3 cup butter or margarine
- 1/2 cup flour
- 3 cups warm milk (I use lowfat)
- 2 cups hot chicken broth
- 2 tsp. salt
- 1/4 tsp. white pepper
- 3 Tbsp. lemon juice
- 1 clove garlic, crushed
- 1 Tbsp. Worcestershire
- 1/4 tsp. Tabasco, or more to taste
Instructions
- Wash, trim and dry broccoli, or open bag. In a saucepan, cook broccoli in the margarine until soft. Blend in the flour and simmer until smooth and bubbling, stirring occasionally. (This never happens for me...it's OK if its lumpy.)
- Add the next 8 ingredients (all the rest). Do NOT add the lemon juice to the milk. It will curdle. Add the lemon juice to the chicken stock.
- Stir constantly, until smooth and thick.
- Remove from burner and whirl ingredients in a blender. OR use your new immersion blender and do it in the pot!
- The soup may be frozen or refrigerated. I put mine in individual sized portions into the freezer and then I have lunch ready to go.
Final Comments
Serve with crusty bread and you have a filling, nutritious meal.
