Red Rice w/ Sausage, Beans & Shrimp

Recipe Introduction
This is a healthy and quick dinner. Get the chef knife ready for some chopping!
List of Ingredients
- Bhutanese red rice (or the rice of your choice)
- 2 1/2 teaspoons olive oil
- 1 onion, chopped
- 1 green pepper, chopped
- 1 rib celery, chopped
- 1/4 pound smoked sausage, diced
- 2 16-ounce cans diced tomatoes w/ garlic and basil
- 1 can kidney beans
- 4 garlic cloves, chopped
- bay leaf
- 1 teaspoon dried thyme
- 1 teaspoon Tabasco
- 1/2 pound medium shrimp, peeled and deveined
- salt, to taste
Instructions
- Make rice according to package directions.
- In olive oil, cook onion, celery, green pepper and sausage. Saute 8 minutes.
- Add remaining ingredients.
- Cook until heated through.
- Serve over rice.
Final Comments
I usually make this early and let it simmer awhile. Better the second day after the party in the pot!
