2 c. all purpose flour
3/4 c. sugar
3/4 tsp. baking soda
1/2 tsp. salt
3 very ripe bananas mashed well (see below for tip)
6 T. unsalted butter, melted and cooled
2 large eggs lightly beaten
1/4 c. plain yogurt or sour cream
1 tsp. vanilla
1/2 c. chocolate chips

*Tip to ripen bananas: Before peeling and mashing bananas, pop them on a baking sheet into the heated oven for 15 minutes while gathering and measuring the rest of the ingredients for this recipe.The skins will turn black, but the flesh will be brown, soft and sweet. Heat oven to 350.Generously grease a 9x5 loaf pan. Whisk the flour, sugar, baking soda and salt together in a large bowl.Whisk the mashed bananas, melted butter, eggs, yogurt and vanilla
in a separate bowl.Gently fold the banana mixture into the flour mixture with a rubber spatula until combined.Fold in the chocolate chips.Do not overmix, the batter will look thick and chunky. Scrape the batter into the prepared pan and smooth the top.Bake until golden brown and a toothpick is inserted into the center comes out with just a few crumbs attached, about 55 minutes.Let the loaf cool
for 10 minutes before removing from pan.
