Pork Rack Ribs
3 stalks of Celery
3 Carrots
1 or 2 Onions
Water

Recipe
In a roasting add your celery, carrots, and onions. Place ribs in and season with salt and pepper. Add water about ¼ to ½ way up the tallest rack of ribs. Preheat oven at 350 degrees. Cover ribs with aluminum foil and place in oven for 1 hour. After the hour turn temperature down to 225 degrees and cook for an additional 2 hours. Remove from
oven and let rest for 15 minutes. Remove ribs from braising pan and strain braising liquid from roasting pan. Reserve liquid for the BBQ sauce. Notes: Do not open oven while cooking as it will let the moister escape and add more time to total cooking time.Add fruit, hot peppers,
or wood to your pan to impart flavor.
BBQ Sauce
After you have removed the ribs from the braising pan, transfer pan to your stove top. Add 1-2 cups of brown sugar (depending on how sweet you like it) and let the sauce reduce on high heat on your stove top. You may want to use two burns turn on high at the same time and aline
your braising pan on top of them. After 10 min or so (or until you see that the sugar and braising liquid has become reduced down into a heavy liquid) add balsamic
vinegar to taste.At this point you can add a teaspoon of tomato paste, blueberries, soy sauce or whatever other flavor enhancers you would like.Once flavored to your liking, strain the sauce through a colander or strainer to catch all the braising vegetables.Let the sauce cool while you skim the fat off the top and serve over your braised ribs.
