    List of Ingredients

    1 c. chopped onion
    2 minced garlic cloves
    2 1/2 tsp. ground cumin
    1/2 tsp. dried oregano
    2 Tbsp. olive oil
    4 boneless chicken breasts
    2 c. chicken broth
    1 c. water
    1 tsp. lemon pepper
    4 oz. diced green chilies
    2 Tbsp. lemon juice
    2 cans great northern beans, undrained (15 oz.)
    2 pkgs. frozen shoepeg white corn, thawed (9 oz.)
    1 c. shredded monteray jack cheese
    salt and pepper to taste


    Cook chicken breasts in olive oil until no longer pink.Let cook and cut up into small pieces.Add onion, cumin, and oregano.Cook until onion is translucent.Add garlic and cook for about 15 seconds.Add remaining ingredients, except cheese.Bring to a boil.Reduce heat to low, cover and simmer for 30 minutes.Add cheese and cook until
    melted.Serve. *If it isnt thick enough, add a tablespoon of cornstarch in 1/3 c. cold water and dissolve.Add to chili and cook until thicker.
