Pasta with Peas and Tuna

1 Tbsp salt
1 10 ounce package frozen peas
4 Tbsp olive oil
1 cup chopped onion
6 cloves garlic, thickly sliced
1/4 teaspoon red pepper flakes
2 Tbsp chopped fresh Italian parsley
2 - 6 oz cans solid white albacore tuna packed in water, drained
1 Tbsp grated lemon zest
2 cups Chicken Stock
1/4 cup freshly squeezed lemon juice
1/4 tsp salt
1/4 tsp freshly ground pepper
1 lb linguine or spaghettiRecipe
Bring a large pot of water, with the salt (if desired) to a boil over high heat. Rinse the peas under warm water for a few seconds and drain well.
In a large saute pan, heat the olive oil over medium heat until sizzling. Saute the onion, garlic, red pepper flakes, and 1tbsp of the parsley until the onion is lightly colored, about 6 to 7 minutes. Stir in the tuna and lemon zest, breaking the Tuna into flakes. Add the stock, lemon juice, 1/4 tsp salt, and pepper. Bring to a boil, then simmer to a saucelike consistency for about 8 to 10 minutes. Stir in the peas and cook for 2 minutes.
Pour sauce over cooked pasta and simmer over low heat, stirring constantly until the pasta is well coated, for about 3 minutes. Remove from heat, sprinkle with the remaining parsley and serve.
