6 oz. white chocolate, coarsely chopped
1 pkg. (8 oz.) cream cheese, room temp.
4 tbsp. (1/2 stick) butter, room temp.
1-tsp. pure vanilla extract
2 ½ cups confectioner’s sugar, sifted
Recipe
Place white chocolate in a small saucepan and melt over low heat, 4 minutes, stirring constantly. Remove pan from heat and let cool. Beat cream cheese and butter with an electric mixer on low speed until well-combined, 30 seconds. Add the melted white chocolate and blend on low for 30 seconds. Add the vanilla and confectioner’s sugar and blend on low speed for 30 seconds more. Increase the mixer speed to medium and beat until the frosting is fluffy, 1 minute more. Frost cake and refrigerate until serving time. Makes 3 cups.
