Brown Sugar Apple Bread

List of Ingredients
2 cups AP flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup sugar
1 8 oz. sour cream
2 large eggs
2 tsp vanilla extract
1-1/4 cups Granny Smith apples, peeled and chopped (aprox. 1 large or two small apples)
1 cup chopped pecans (divided)
Topping:
1/2 stick real butter (1/4 cup)
1/4 cup packed light brown sugarRecipe
Preheat oven to 350°F.
grease 1 9X5X3-inch loaf pan
In a medium bowl stir together flour, baking powder, baking soda, and salt; set aside.
In a large mixing bowl beat together (white) sugar, sour cream, eggs, and vanilla extract on low speed until it's combined. Then beat on medium speed for 2 minutes.
Add flour mix to the sour cream mixture, beating on low speed until well combined. Stir in apples and 1/2 C. of the pecans. Spoon into greased loaf pan. Sprinkle with remaining chopped pecans; press lightly into batter.
Bake at 350°F. for 55-60 minutes or until toothpick inserted in center comes out clean. (If necessary, cover loosely with foil the last 10 minutes of baking to prevent over-browning.) Cool in the pan on a wire rack for 10 minutes.
Meanwhile, in a small saucepan combine butter and brown sugar; cook and stir until mixture comes to a boil. Reduce heat and boil gently for 1 minute. remove bread from pan. Drizzle top with brown sugar mixture; cool.
Makes 1 loaf.
**Options/Notes**
1. Using peaches or apricots in place of apples would also work well.
2. Double the topping recipe, and with a wooden spoon handle, poke holes in the bread and then pour topping over the top making sure to get the sugar down in the holes
3. Since there is no oil in this recipe, make sure you use reg. sour cream (not the light kind).
4. With the apple version, 1 tsp of cinnamon and 1/2 tsp ground clove would also work well.
