Fresh Apple Salad

8 cups chopped red apples, unpeeled
1 20 oz. can pineapple chunks, drained, reserve juice
2 cups seedless grapes
1 tsp poppy seeds
1 cup chopped nuts
Dressing:
Reserved pineapple juice
1/4 cup butter
1 Tblsp lemon juice
1/4 cup sugar
2 tsp. cornstarch
2 tsp. water
1/4 cup mayo
3/4 cup lemon yogurt
Make dressing first by combining first four ingredients in saucepan. Heat to boiling. Combine starch and water. Add. Cook until smooth. Chill. Add mayo and yogurt. Dress fruit. Add nuts right before serving.
