    Brussel Sprouts-Inside Out

    2 pounds ground beef
    1 1/2 cups uncooked rice
    1 medium onion, chopped
    2 eggs, slightly beaten
    1 1/2 tsp. garlic salt
    1/2 tsp. pepper
    1 Pkg. (10 oz.) frozen brussel sprouts
    2 cans (15 oz.) tomato sauce
    1 cup water
    1 tsp. dried thyme

    Recipe



    In large bowl, combine the first 6 ingredients and mix well. Shape a scant 1/4 cupful around each frozen brussel sprout to form a meatball. Place in an ungreased 15 x 10 x 1 baking dish. Combine tomato sauce, water and thyme. Pour over meatballs. Cover and bake 350 degrees for 1 hour and 15 minutes or until meatballs are cooked through.
    That is the original recipe... now here is how I do it;
    Use a good grade of ground beef to help cut down on all the grease.
    I use 2 cans of tomato soup and 1 can of water instead of the tomato sauce.
    I like to add other seasonings at times, touch of cayenne or Cajun, to your taste.
    I cook this on top of the stove in my Dutch oven. An hour to an hour and a half, depending on how much hamburger I have wrapped around the brussel sprout and how big it evolved!
