GF Venison Meatloaf

I have a husband who hunts so I am always happy to find recipes where I can use venison.
List of Ingredients
- 1 pound ground venison
- 1/2 zucchini, shredded
- 1 large carrot, shredded
- 1 medium potato, shredded
- 2 eggs
- 1 cup crushed cornflakes (GF)
- 1/2 c parmesan
- 1/2 onion - chopped
- tomato sauce
Instructions
- mix all ingredients except tomato sauce.
- place into loaf pan
- bake at 400 - 45 minutes
- pour tomato sauce all over
- continue baking at least 20 more minutes or until done.
Final Comments
Needed a little salt and pepper. Might try a little more cornflakes, but over all YUMMY!
