Boneless beef round roast

for 6 to 8 quart cookers
List of Ingredients
1 1/2# boneless beef round (or other inexspensive cut)
2 onions, slice 1/4 in.
1 clove garlic
1c beef broth
2tblsp corn starch (thickener)
2 med bell peppers, cut in strips
2 med tomatoes or can'd whole, cut in wedges(if can'd check for lowest sodium content)
salt and pepperRecipe
Rub beef with favorite meet rub or combo of salt and pepper.(I like a 2 to 1 mix of coarse salt and course pepper)
Trim excess fat, heat skillet to med. hi, spray w/cooking spray(I keep a spray bottle of my favorite olive oil and one of vegitable or canola oil)
Add beef, brown(about 8 min) turning once. Add beef broth, garlic, onions, bells. Mix well. Cook on low for 8 to 9 hours. Add tomatoes last minute or two of cooking process.
