1/2# boneless beef round (or other inexspensive cut)
1c chopped cilantro (or dried per/amt. suggested on container.
1c frozen kernal corn
1 large onion/chopped
20 0z of salsa, jar or home-made
15 oz black beans, drained
Shredded Jack cheese for topper
Recipe
Place all ingredrients in cooker except cheese, cook on low for 8 - 9 hours.

I think this would be good with chicken and either one would be great on top of a rice, pasta or, if watching carbs closly, a good, stone ground corn chip.
