Classic Quiche Lorraine--Mom
List of Ingredients
Pastry for 9" pie
12 slices Bacon, cooked & crumbled
4 Eggs, beaten
1 C (4 oz) Shredded Swiss cheese
2 C Half & half
3/4 tsp Salt
1/8 tsp Pepper
Line a 9" quiche dish or pie pan with pastry; trim excess pastry around edges. Prick bottom and sides of shell with a fork, and bake at 425° for 6 to 8 minutes. Let cool on wire rack. Sprinkle bacon and cheese evenly into pastry shell. Combine eggs, half and half, salt and pepper; mix well and pour into shell. Bake at 425° for 15 minutes. Reduce heat to 300° and bake an additional 40 minutes or until set.
