    1. Cut fish in small pieces. Cover with the following and let set 48 hours in Refrigerator:

    1 / 2 cup salt and 1 quart water

    2. Drain, and rinse well. Cover with white vinegar and let set in fridge for 3-4 days

    3. Drain, pack fish in quart jars with lots of sliced onion.

    Combine following Brine and heat till sugar dissolves:

    4 cups white vinegar
    3 cups sugar

    when sugar is dissolved, remove from heat and add:

    1 cup silver satin wine (a sweet apple wine)
    1 / 4 cup pickling spices

    Bring brine to boil. Cool. Pour over fish in Jar. Refrigerate and let stand 4-5 days before serving. This will make 4 quarts.
