    My precious maternal grandmother who also made the best strawberry jam I ever ate!

    Recipe Introduction


    This cheesecake is lighter than typical cheesecakes. It takes a lot of time, so make it for the people you really love.

    List of Ingredients




    CRUST
    1 3/4 cups graham cracker crumbs
    1/4 cup sugar
    1/2 cup melted butter

    CHEESECAKE
    16 oz dry small curd cottage cheese
    2 8oz packages cream cheese (soft)
    1 1/2 cups sugar
    4 eggs (slightly beaten)
    1/3 cup corn starch
    2 Tablespoons fresh lemon juice
    1 teaspoon vanilla
    1/2 cup butter (melted)
    1 pint sour cream

    FOR CRUST:
    Heat oven to 350 degrees. Grease 9" springform pan. Mix crumbs, sugar and butter. Press mixture into sides and bottom of pan. Bake for 10 minutes at 350 degrees. Cool.
    Decrease oven temp to 300 degrees.

    FOR CHEESECAKE:
    Sieve cottage cheese into large mixing bowl. (Make sure the cottage cheese is totally creamed). Add cream cheese. Beat with high speed of electric mixer until blended and creamy. Beating at high, blend in sugar, eggs. On low speed add corn starch, lemon juice and vanilla. Beat until blended. Add melted butter and sour cream. Blend with low speed. Pour into prepared pan. My grandmother's recipe originally says to bake in 325 oven for 1 hour and 10 minutes (or until firm around the edges)***I think this tends to overcook the cake and causes the top to crack, so I bake mine at 300 degrees on a rack 2/3 up from bottom of oven for 1 hour and 10 minutes. Turn off oven. Leave oven door opened a crack and let cake stand in oven for 2 hours. Remove and cool on a wire rack. Chill. Remove sides of pan.
