    I tried this recipe recently after my husband caught several trout at the lake near our mountain cabin. It was as good as any trout you would ever order at a fine restaurant.

    List of Ingredients




    4 trout filets
    2 cups flour
    1 teaspoon salt
    pinch of cayenne
    1 cube butter
    thyme/dill
    1/8 cup lemon juice
    1/8 cup dry white wine (I use Chardonnay)
    2 oz slivered almonds (toasted)

    Recipe



    In a bowl mix the flour, salt and cayenne. Place filets, one at a time, in the bowl and cover with flour. Melt butter in large fry pan. Fry filets for approx 2-3 minutes each side. Sprinkle a dash of thyme or dill on filets. If trout still has skin on, cooking time will increase on the skin side by about 1 minute. Remove filets from pan and keep warm. Add lemon juice, wine, and almonds to pan and stir with whisk while simmering. Serve sauce over filets.
