Amish Custard Pie

List of Ingredients
- 1 9" pie shell
- 4 eggs
- 1/2 cup sugar
- 1/4 tsp. salt
- 1 tsp.vanilla extract
- 2 1/2 cups milk
- 1/3 tsp. ground nutmeg
Instructions
- Line the pie pan with foil and bake @ 450 for 8 minutes.Remove foil and bake 5 minutes longer.
- Remove from oven and set aside.
- Seperate one egg; setting aside the white.
- In a mixing bowl beat the egg yolk and remaining eggs together.
- Blend in sugar, salt and vanilla; stir in milk.
- Beat the remaining egg white until stiff peaks appear;fold into pie mixture.
- Pour into crust.
- Cover edges of pie crust.
- Bake @ 350 for 25 minutes. Remove foil and bake 15 minutes longer till pie is set.
- Remove from oven and cool. Sprinkle with nutmeg
- Refrigerate.
