    Marinated Antipasto Platter

    List of Ingredients


    • MARINADE:
    • 1/4 cup red wine vinegar
    • 2 Tbls. orange juice
    • 1 tsp dried rosemary
    • 1 tsp tarragon
    • 1/4 cup olive oil
    • ANTIPASTO
    • 2 cups assorted olives drained ( green and black)
    • 1 6 oz jar whole mushrooms drained
    • 1 8 oz block cheese cut into 1/2" cubes ( mozzarella or swiss)
    • 1/2 lb sliced hard salami
    • Cocktail toothpicks


    Instructions


    1. In a non metal bowl mix all marinade ingredients except the oil. Mix well.

    2. Slowly add oil, beating with a wire whisk till marinade is thick and well blended.

    3. In another nonmetal bowl mix mix the olives, mushrooms and cheese.

    4. Add marinade and refigerate over night

    5. When ready to serve, cut salami slices in half. Roll slices into small cone shapes. Spear with toothpicks

    6. On a round platter arrange salami in the center.

    7. Drain the marinated vegtables; reserving the marinade

    8. Arrange the olives, mushrooms and cheese around the edge of the platter.

    9. Drizzle remaining marinade over the salami.

    10. Serve with toothpicks
