Cheddar Cheese: Three Cheese Cheese Ball

� 2 tbs. minced onion
� 1/4 cup cream cheese
� 1/4 cup processed swiss cheese spread ( I use Merkt's or Scott's Swiss Almond cheese spread)
� 1 cup grated cheddar
� 1/8 tsp. lemon pepper
� 1/8 tsp. dried cilantro
� 1 tbs. sunflower seeds lightly roasted
� 1 tbs. chopped almonds lightly roasted
Recipe
-Place the sunflower seeds and the almonds on a baking sheet and bake in a 400 degree oven for 10 minutes or until they are lightly roasted.
-Keep a close eye on them because once they begin to roast they will burn quickly.
-In a bowl combine the cream cheese, swiss, cheddar, lemon pepper, and cilantro.
-Mix together and form into a ball.
-Place the roasted sunflower and almonds in a mortar and pestle or coffee grinder and grind until ground.
-Pour them onto a plate.
-Roll the cheese into the ground nuts until it is completely covered.
-Refrigerate for 30 minutes minimum.( I make this 2-3 days ahead of time to let the flavors blend)
-Serves 4
