-1 (16 ounce) can white Shoe Peg corn, drained
-1 (16 ounce) can black beans, drained
-1 (16 ounce) can black-eyed peas, drained
-1 green bell pepper, chopped
-1 bunch green onions, chopped
-3 tomatoes, chopped
-1 (8 ounce) bottle Italian salad dressing
-½ cup nonfat Italian salad dressing
Recipe
-Combine the corn, beans and peas in a bowl.
-Add the bell pepper, green onions and tomatoes.
-Add the salad dressing and mix gently.
-Chill, covered for 2 hours or longer.
-Serve with corn chips.
You may use either the regular or nonfat salad dressing or any combination you prefer. (I like to use the nonfat entirely, especially the Light Done Right Italian Dressing by Kraft).
