Mexican: Pepper-Jack Spread

List of Ingredients
1 scallion, chopped
3 dashes hot pepper sauce
4 oz. cream cheese, softened
1/2 c. cubed jalapeno flavored Monterey Jack cheese
1/2 c. cubed sharp cheddar cheese
1 T. lime juice
Recipe
Combine scallion, hot pepper sauce, and cream cheese in bowl of food processor.
Whirl until finely chopped.
Add all other ingredients.
Pulse until well blended and very smooth.
Put into small bowl.
Cover and refrigerate at least 24 hours or up to one week. Serve with assorted crackers.
Makes about 1 1/2 cups.
