    Mexican: Sassy Chicken Enchilada Dip

    Recipe Introduction

    -My sister-in-law made this for a holiday, and it was a quick solution for me to use at a party the following night. -It is a quick and easy appetizer, and different than the rest of the dips we are used to! -Definitely classified as a keeper! -Serve with tortilla chips. -Prep Time: approx. 15 Minutes. -Ready in: approx. 2 Hours 15 Minutes. -Makes 16 servings.

    List of Ingredients

    -3 cooked, boneless chicken breast halves, shredded
    -2 (8 ounce) packages light cream cheese, softened
    -4 green onions, chopped
    -1 (10 ounce) can diced tomatoes with green chile peppers
    -1 teaspoon minced garlic
    -1 teaspoon chopped cilantro
    -1 tablespoon chili powder
    -1 teaspoon cumin
    -1 teaspoon dried oregano
    -1 teaspoon paprika



    Recipe

    -In a bowl, mix the shredded chicken, light cream cheese, green onions, diced tomatoes with green chile peppers,
    garlic, and cilantro
    -Season with chili powder, cumin, oregano, and paprika.
    -Mix well
    -Cover, and chill at least 2 hours.
    -Serve with tortilla chips for dipping.
