Additional notes: I "tripled" the recipe for the staff potluck...I used 1lb. of Velveeta and 16oz of shredded sharp cheddar in addition to the Mexican cheese above. I used a 16 oz jar of corn and black bean medium salsa...I also heated the cheese in the microwave to speed up the melting process...5 minutes/power 5, stir and heat again until melted. Transfer to crock pot and heat on low. Enjoy!
List of Ingredients
1/2 pound ground beef
1 cup frozen corn
1/2 cup chopped onion
1/2 cup salsa
1 can (4oz) mild green chilies
1 can (4oz) sliced ripe olives, drained
1 cup shredded Mexican blend cheese
Tortilla chips

Brown ground beef and spoon into slow cooker. Add corn, onion, salsa, chilies, and olives; stir to combine. Cover, cook on low 2-4 hours. Just before serving, stir in cheese.
Top with sour cream if desired.
