Mexican: Enchilada Dip

List of Ingredients

-1 box Jiffy cornbread mix
-1 1/2lb lean ground beef
-10 3/4oz mild enchilada sauce
-3/4tsp taco seasoning
-8oz fiesta blend shredded cheese



Recipe

-Mix cornbread batter as directed.
-Stir in 4oz cheese.
-Set aside.
-Brown ground beef with taco seasoning and 1/2 can of sauce.
-In 2qt greased glass dish, spoon in 1/2 of ground beef.
-Spread 1/2 of cornbread batter over top.
-Repeat layers.
-Pour on rest of enchilada sauce.
-Sprinkle 2oz of cheese on top.
-Bake at 400º for 20 minutes.
-Add rest of cheese, and stir dip to thoroughly mix.
-Serve with tortilla chips.
