Curried Beef Kabobs

THIS MAKES 8 KABOBS
List of Ingredients
- 2/3 cup oil
- 1/2 cup beef broth
- 1/2 cup lemon juice
- 2 garlic cloves; minced
- 2 tsp. curry powder
- 2 tsp. salt
- 4 bay leaves
- 16 whole peppercorns
- 2 lbs. beef sirloin cut into 1 1/2" cubes
- 2 large green peppers cut into 2" pieces
- 3 medium tomatoes cut into wedges
- 3 medium onions cut into wedges
Instructions
- In a large resealable plastic bag, combine the first 8 ingredients. Mix well.
- Remove 2/3 cup for basting; refrigerate.
- Add beef to the remaining marinade. Turn to coat.
- Cover and refrigerate for 8 hours or over night.
- Drain and discard the marinade.
- On metal or soaked bamboo skewers alternate beef, green peppers, tomatoes, and onions.
- Grill over hot coals turning and marinating frequently for 10-15 minutes until meat reaches desired doneness.
- You can also cook these inside on a greased rack in the broiler. Broil and baste for 15-20 minutes.
