Butterscotch Muffins

List of Ingredients
- 2 cups flour
- 1 cup sugar
- 1 small pkg instant butterscotch pudding
- 1 small pkg. instant vanilla pudding
- 2 tsp. baking powder
- 1 tsp. salt
- 1 cup water
- 4 eggs
- 3/4 cup oil
- 1 tsp. vanilla extract
- TOPPING:
- 2/3 cup brown sugar
- 2 tsp. cinnamon
- 1/2 cup chopped pecans
Instructions
- In a mixing bowl, combine the flour, sugar, pudding mixes, baking powder and salt.
- In a seperate bowl mix the water, eggs, oil and vanilla.
- Stir egg mixture into dry ingredients til just moist.
- Fill paper lined muffin cups 2/3 full
- Combine topping ingredients and sprinkle over batter in muffin cups.
- Bake @ 350 for 15-20 minutes.
- Cool 5-10 minutes before removing from pans.
