    1 1/4 cups yellow corn meal
    1 1/4 cups flour
    1 level Tablsp baking powder
    1 tsp salt
    1/4 tsp paprika
    1 tsp sugar
    1 well beaten egg
    2/3 cup milk
    1/2 cup evaporated milk
    1/4 cup shortening
    15 oz can cream style corn
    4 Tabsp. butter
    2 Tabsp chopped onion
    3 Jalapeno chiles, seeded and chopped
    1 4oz can chopped green chilies
    3 Tabsp. chopped piimento
    1 cup cheddar cheese, shredded

    Recipe



    Mix cornmeal, flour, baking powder, salt, sugar and paprika in a large mixing bowl.
    Combine egg with milk, shortening, corn and canned chilies.
    Add to dry ingredients.
    IN saucepan melt butter and saute onions, chilies and pimientos until onions are tender.
    Add this to rest of mixture and mix well but don't over mix.
    Add cheese and blend in .
    Butter an 8" square pan and pour mixture in.
    Bake in 400 degree oven for 35 minutes or until knife comes clean from center of corn bread.
    Cool and cut in pieces.
