    Coffe Cakes: Blueberry Coffe Cake

    List of Ingredients


    • 1 1/2 cups flour
    • 1 cup brown sugar
    • 1 tsp baking powder
    • 1 tsp baking soda
    • 1/4 tsp salt
    • 1/4 tsp cinnamon
    • 1/2 cup soft margarine
    • 1 egg
    • 1/2 cup butter milk or sour milk
    • 1 tsp vanilla
    • 1 1/2 cups blueberries
    • Powdered Sugar
    • Crumb topping:
    • 1/4 cup flour
    • 2Tbls. sugar
    • 2Tbls margarine


    Instructions


    1. Grease a 9" spring foam pan. Line the bottom w/ waxed paper. Grease and flour the waxed paper

    2. In a large mixing bowl blend flour, brown sugar, baking powder, soda, salt and cinnamon.

    3. Cut in the margarine till mixture is coarse crumbs.

    4. Mix together in a seperate bowl the egg, milk and vanilla

    5. Make a well in the center of the cake mixture and add the egg mixture. Stir till thoroughly blended

    6. Spread batter in pan and top w/ blueberries.

    7. Mix crumb topping together and sprinkle over top of blueberries.

    8. Bake @ 350 for 50 minutes

    9. Cool in pan for 30 minutes

    10. Invert on to a plate and remove waxed paper.

    11. Immediatly invert again and sprinkle with powdered sugar.



    Final Comments


    This is good served slightly warm
