Eggs: Crab Quiche

- 1 9" pie shell unbaked
- 1 Cup Shredded Swiss Cheese
- 1/2 cup chopped sweet red pepper
- 1/4 cup chopped green onions
- 1 Tbls. margarine
- 3 eggs
- 1 1/2 cups half-n-half
- salt and pepper to taste
- 3/4 Cups chopped imitation crab meat
Instructions
- Line an unpricked pie shell with foil and bake @ 450 for 5 minutes. Remove foil and bake 5 more minutes.
- Immediatley sprinkle crust with 1/2 of the cheese.
- Reduce heat to 375
- In a skillet, saute the red pepper and onions in the margarine until tender
- In a large bowl, whisk eggs, cream, salt and pepper.
- Stir in crab, red pepper mixture, and remaining cheese.
- Pour into crust.
- Bake @ 375 for 30-35 minutes, or until set.
- Let stand 10 minutes before cutting.
