    Eggs: Bacon Cheddar Quiche

    List of Ingredients




    1 inch pastry shell, uncooked (1 to 9)
    12 slices bacon (about 1/2 pound), crisply fried and crumbled
    1 cup shredded cheddar cheese (about 4 ounces, I use sharp)
    1/3 cup minced onion
    4 eggs
    2 cups whipping cream or Half and Half**
    3/4 tsp. Salt
    1/4 tsp. Sugar
    1/8 tsp. cayenne red pepper

    Recipe



    1. Prheat oven to 425ºF. Prepare pastry. Toss together bacon, cheese and onion in small bowl. Place mixture into the pastry-lined pan. In a medium size bowl beat egss slightly. Add cream or half and half and seasonings into eggs and whisk until well blended. Pour egg mixture over ingredients in pie pan. Bake for 15 minutes.

    2. Lower oven temperature to 300ºF and continue to bake for an additional 30 minutes or until knife inserted one inch from edge comes out clean. Remove from oven and allow quiche to rest for 10 minutes before serving.

    3. ** Using Half and Half lowers the fat content of this recipe, yet still results in a tasty quiche.
