    1 1/2 cup crushed Sun Chips or Fritos
    3 small cans whole chili peppers, drained
    1 lb block Jack Cheese
    4 oz. enchillada sauce
    5 eggs, beaten
    1/4 cup milk or cream
    1 8 oz bag grated Chedder Jack cheese

    Recipe



    Pre-heat oven to 350 degrees.
    Spray bottom of 9" x 5" baking dish with cooking spray. Spread crushed chips or Fritos on bottom of baking dish.
    Open and drain juice from chili peppers.
    Cut cheese into same number of strips as chili peppers. Roll strip of cheese inside chili, place on layer of chip/crust.
    Pour enchilada sauce over stuffed chilis.
    Mix eggs with milk or cream and pour over chilis and sauce
    Bake at 350 for approximately 25 minutes.
    Remove and cover top of baked casserole with grated cheese.
    Return dish to oven and continue baking for approximately 10-15 minutes, or until cheese is melted.

    Total baking time approximately 45 minutes. Serve hot.
