Eggs: Mushroom Brunch Rounds

List of Ingredients
4 English Muffins toasted and buttered
1 lb. sharp cheddar cheese sliced into 16 slices
4 eggs; scrambled
8 slices bacon fried crisp and crushed
4 T butter
1/2 small onion sliced
1 jar button mushrooms drained
1 small can mushroom slices drained
2 cans Mushroom Soup
1/4 cup evaporated milkRecipe
Melt butter in saucepan.
Add onions.
Saute 5 mins.
Add mushrooms to onions and saute additional 5 min.
Add mushroom soup and milk to saucepan.
Mix well, heat and keep warm.
Place 2 slices of cheese on the 8 halves of the toasted, buttered Engish Muffins.
Place under broiler until cheese starts to bubble.
Remove from broiler.
To assemble:
Place 2 muffins halves on each of 4 plates.
Spread 1/8 of the scrambled eggs on each muffin.
Spoon 1/4 of the mushroom mixture on muffins.
Sprinkle 1/4 of the crushed bacon on mixture and serve.
