Muffins: Caramel Apple Muffins

2 cups flour
3/4 cup sugar
2-1/2 teaspoons cinnamon
2 teaspoons baking powder
1/2 teaspoon salt
12 caramels, diced
1/4 cup melted butter or margarine
1 egg
1 cup milk
2 teaspoons vanilla
1/2 cup peeled, chopped or shredded applesRecipe
Sift all dry ingredients into a large bowl; fold in caramel pieces until well-coated. Set aside. In small bowl, whisk together butter, egg, milk and vanilla; fold in apples. Pour over dry mixture and fold together only until all is moist and well-mixed. Spoon into 12 greased and floured or paper-lined muffin tin cups. Bake at 400 degrees for 25 minutes or test done.
