Coffee Cakes: Rhubarb Coffee Cake

List of Ingredients
- 3 1/2 cups diced rhubarb*
- 3/4 cup sugar
- 3 Tbls. cornstarch
- 3 Tbls. cold water
- CAKE:
- 1 1/2 cups flour
- 3/4 cup sugar
- 1 tsp. cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 1/2 tsp. baking powder
- 1/2 tsp baking soda
- 3/4 cup margarine
- 2 eggs
- 3/4 cup buttermilk
- 1/2 tsp. almond extract
- TOPPING:
- 1/2 cup sugar
- 1/2 tsp cinnamon
- 1 Tbls. margarine
- 1/2 cup chopped walnuts ( optional)
Instructions
- In a sauce pan combine the rhubarb and sugar; let stand for 15 minutes.
- Combine the cornstarch and water and stir into the fruit mixture.
- Bring to a boil; cook and stir over medium heat for 2 minutes. Cool
- Combine all dry ingredients for the cake.
- In a seperate bowl combine eggs, buttermilk and extract; add to flour mix and blend through.
- Spread 1/2 of the mixture into a greased 9" pan.
- Carefully spoon the fruit mix on top.
- Spoon remaining cake mixture on top of fruit.
- For topping combine the sugar and cinnamon; cut in butter until crumbly.
- Stir in walnuts if using, and sprinkle over the batter
- Bake @ 350 for 40-45 minutes.
- * you can substitute 1 1/2 cups of the rhubarb for strawberries if you want.
