Eggs: Skillet Breakfast

List of Ingredients
- 6 slices bacon, cut into pieces
- 6 cups frozen hash browns
- 1/2 cup chopped green onion
- salt and pepper to taste
- 6 eggs
- 1/3 cup shredded cheddar cheese
Instructions
- In a very large skillet cook bacon until crisp.
- Remove bacon; crumble and set aside.
- Drain drippings saving 2 Tbls.
- Add potatoes, onions and salt and pepper.
- Cook and stir for 2 minutes.
- Cover and cook, stirring occasionally, until the potatoes are browned and tender, about 15 minutes.
- Make 6 wells in the potato mixture.
- Break one egg into each well.
- Cover and cook on low heat for 8-10 minutes, until eggs are set.
- Sprinkle with cheese and bacon.
- Serve right away
