    Eggs: Skillet Breakfast

    List of Ingredients


    • 6 slices bacon, cut into pieces
    • 6 cups frozen hash browns
    • 1/2 cup chopped green onion
    • salt and pepper to taste
    • 6 eggs
    • 1/3 cup shredded cheddar cheese


    Instructions


    1. In a very large skillet cook bacon until crisp.

    2. Remove bacon; crumble and set aside.

    3. Drain drippings saving 2 Tbls.

    4. Add potatoes, onions and salt and pepper.

    5. Cook and stir for 2 minutes.

    6. Cover and cook, stirring occasionally, until the potatoes are browned and tender, about 15 minutes.

    7. Make 6 wells in the potato mixture.

    8. Break one egg into each well.

    9. Cover and cook on low heat for 8-10 minutes, until eggs are set.

    10. Sprinkle with cheese and bacon.

    11. Serve right away
