Chocolate Covered Cherries

3 jars of maraschino cherries with stems
1 c. butter
2 1/2 Tbsp. white syrup
1 1/2 Tbsp. evaporated milk
2 tsp. almond extract
2 lbs. powdered sugar
Dip
6 squares of semi-sweet chocolate
1" strip of paraffinRecipe
Blend together butter, white syrup, evaporated milk and almond extract. Then add powdered sugar, one-fourth of a bag at a time. Mix this mixture with a fork until it becomes crumbly. Then work together with your fingers until it becomes a dough-like mixture. Make it into small balls with your hand and then press down to silver-dollar size and wrap the dough around the cherry. Place on a tray and refrigerate or freeze until ready to dip.
Dip:
Melt in a double boiler 6 squares of semi-sweet chocolate, 1 inch strip of paraffin wax, (shaved into chocolate). Dip the cherries into the chocolate mixture by the stems, refrigerate or freeze until ready to eat. Yields 75 chocolate covered cherries.
