    Perfect Peppermint Patties

    List of Ingredients




    -1 lb. icing sugar (powdered)
    -3 Tbs. butter or margarine, softened
    -2 or 3 tsp. peppermint extract
    -1/2 tsp. vanilla extract
    -1/4 cup evaporated milk
    -2 cups semisweet chocolate chips
    -2 Tbs. solid shortening

    Recipe



    -In a bowl, combine first four ingredients.
    -Add milk and mix well.
    -Roll into 1 in. balls and place on waxed paper-lined cookie sheet.
    -Chill for 20 mins.
    -Flatten with a glass to 1/4"; chill overnight. (I put them in the freezer. Just take out a few at a time to keep them really hard.)

    -Melt chocolate chips and shortening.
    -Dip patties; place on waxed paper to harden.

    -Makes about 4-5 dozen.


    **Notes: If you are serious about making the peppermint patties you should buy a size 100 scoop. It is just the right size and makes the work so much easier. I triple the recipe and use 1 bottle of peppermint extract. I also dip a glass in confectioners’ sugar to flatten the patties.
