- Roast or steak
- BROTH:
- 1 cup brown sugar
- 3/4 cup salt
- 1 Gallon hot water
Instructions
- Put meat into jars. Leave a 1" headspace
- Cook the broth mixture til just warm.
- Pour broth over meat, remembering to leave the 1" headspace.
- Remove air bubbles with a non metal spatula.
- Wipe jar rim clean
- Place prepared lid and band on jars and seal to fingertip tight. We like to tighten firm the back it off just a little.
- Process @ 10 lbs pressure Pints: 1 hour and 15 minutes. Quarts 1 hour and 30 minutes.
- The broth will make 14 quarts.
