Recipe Introduction
Since we live in Iowa there is nothing better than opening a jar of tomatoes in winter... tastes just about as good as they do fresh out of our summer garden.
List of Ingredients
- Tomatoes (roughly 3 lbs per qt jar)
- salt
Instructions
- Prepare tomatoes by blancing them in hot water til skins crack, immediatly dump into ice water. Slip off the peels, cut off tops and core.
- Cut tomatoes in half (Leave small ones whole) Dump into a strainer.
- Pack into prepared quart jars. Leave a 1" headspace.
- Remove air bubbles with a non metal spatula.
- Add 1 tsp salt to top of each jar
- Wipe rims clean.
- Place prepared lid and band on jars and tighten fingertip tight. We tighten firmly; then back it off just a little
- Process @ 10 lbs pressure for 20 minutes.
