    Tail Kick'n Chili for a Crowd

    List of Ingredients

    -3 tablespoons cumin
    -pinch of sea salt
    -pinch of oregano
    -1/2 teaspoon hot dry mustard
    -1 1/2 whole garlic bulbs
    -12 ounces tomato sauce
    -12 ounces whole canned tomatoes
    -3 Ortega green chilies
    -1/2 ounce tequila
    -12 ounces beer
    -4 white whole onions

    -10 pounds corsely ground beef or lean brisket
    -2 pounds fresh ground pork
    -2 bottles (1.7 each) mexican chili powder
    -2 beef bouillon cubes
    -1/2 teaspoon brown sugar
    -4 teaspoons oil

    ADD TO TASTE (I used a little over half the jar)

    Chipotle Sauce
    -1 small can (7-ounce) chipotle peppers in adobo sauce
    -2 14.5-ounce cans chopped tomatoes (not stewed tomatoes with peppers and onions)
    -2 tablespoons olive oil
    -1/2 cup minced fresh cilantro

    Combine all ingredients and purée in a blender or food processor.


    Recipe

    -Chop onions, garlic and chilis finely.
    -Chop brisket or loosely put in fresh ground beef and fresh ground pork, brown it with onions in 4 teaspoons oil.

    -When meat is LIGHTLY pink add rest of ingredients.
    -Simmer 6-7 hours stirring occasional.
    -DO NOT STIR THE LAST 30 MINUTES.
    -COVER AND LET SIMMER.


    ****Top with sour cream, fresh chopped green onions and shredded cheese.
