Blueberry Buckle with Streusel Topping

List of Ingredients
Buckle:
½ C. butter
¾ C. Sugar
1 egg
1 tsp. vanilla extract
2 C. flour
1½ tsp. baking powder
½ tsp. salt
½ C. milk
5 C. blueberries
Streusel Topping
1 tsp. cinnamon
¼ tsp. salt
¼ C. packed light brown sugar
1 C. flour
6 T. butter
Recipe
Buckle:
Heat oven to 350 degrees. Butter and flour spring- form pan.
Mix dry ingredients and set aside. In the bowl of an electric mixer fitted with the paddle, cream butter and sugar on medium speed until light and fluffy.
Reduce speed to low and add milk and vanilla. Alternate adding the dry mix and milk mix. Begin and end with the dry mix.
Remove from mixer and fold in the berries. Pour batter into pan and sprinkle with streusel topping. Bake 60 to 70 minutes until a cake tester comes out batter free. Remove cake from oven and leave in pan for 10 minutes on cooling rack. Remove from pan. Let cool 15 minutes before serving.
Streusel Topping
Mix the dry ingredients. Cut in the butter using a pastry blender or fork until fine crumbs form.
Using hands squeeze together most of the mixture to form large clumps.
Store refrigerated in an airtight container or sprinkle directly onto cake.
