1/2 cup soft butter or margarine
1 cup flour
1 tablespoon sugar
3 eggs, separated
1 cup sugar
2 tablespoons cornstarch or flour
1/4 teaspoon salt
1/2 cup cream or half-and-half
3 cups thinly sliced rhubarb
1/2 cup sugar
1 teaspoon vanilla
1/4 cup coconut
Recipe
Combine butter, 1 cup flour, 1 tablespoon sugar; mix well and press into ungreased 9-inch square pan.
Bake at 350 degrees for 10 minutes.
Beat egg yolks, 1 cup sugar, 2 tablespoons cornstarch, salt and cream in a large bowl.
Stir in rhubarb and pour over hot crust.
Beat egg whites to soft peaks.
Gradually add 1/3 cup sugar; beat to stiff peaks.
Fold in vanilla.
Spread over rhubarb layer.
Sprinkle coconut over all.
Bake about 10 minutes or until golden brown.
Cool before serving.
Serves 6.
