Rhubarb Cobbler

List of Ingredients
- 7 Tbls. margarine
- 3/4 packed brown sugar
- 1/2 cup sugar
- 3 Tbls. cornstarch
- 1 1/4 cups water
- 6 cups chopped rhubarb
- 3-4 drops red food coloring
- 1 1/4 cups flour
- 1 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/3 cup milk
- cinnamon and sugar
Instructions
- In a sauce pan over medium heat; melt 3 Tbls. margarine.
- Add brown sugar, 1/4 cup sugar and cornstarch..
- Gradually stir in the water and rhubarb; cook and stir til thickened about 5-6 minutes.
- Add food color if desired.
- Pour into a greased 2 tq. baking dish and set aside.
- In another bowl, combine the flour, baking powder, salt and remaining sugar. Melt remaining margarine and add to the dry ingredients. Stir in milk and mix well.
- Drop by Tbls. onto the rhubarb.
- Bake @ 350 for 35-40 minutes til fruit bubbles and top is golden brown.
- Sprinkle with cinnamon sugar.
- Serve warm with ice cream
