Rhubarb Crisp

- CRUMB TOPPING:
- 1 cup flour
- 1/2 cup quick oats
- 1 cup packed brown sugar
- 1/2 cup butter melted
- RHUBARB FILLING:
- 4 cups cut up rhubarb
- 1/2 cup sugar
- 1 small pkg. strawberry jello
- 1/4 cup flour
- 1/2 tsp. cinnamon
- 1/2-3/4 cup water
Instructions
- In a mixing bowl combine the dry topping ingredients and mix well. Add melted butter and stir til crumbly. Set aside
- In another bowl combine the cut up rhubarb, sugar, dry jello,flour and cinnamon. Mix well and add the water. Stir to blend through.
- Pour rhubarb mixture into a greased 8x8 pan.
- Sprinkle crumb topping onto the rhubarb mix.
- Bake uncovered in a preheated 350 oven for 35-40 minutes, til topping is golden.
