    Rhubarb Dream Bars

    For crust:
    -1 1/2 cups unbleached all-purpose flour
    -3/4 cup powdered sugar
    -1/4 teaspoon salt
    -1/2 cup (1 stick) unsalted butter
    -2 tablespoons grated lemon zest (colored portion of peel)
    -1 teaspoon fresh lemon juice

    For filling:
    -4 large eggs
    -1/4 teaspoon salt
    -2 cups granulated sugar
    -1/2 cup unbleached all-purpose flour
    -4 cups (1 pound) packed diced rhubarb (from about 1 1/2 pounds rhubarb stalks)


    Recipe



    Step 1:
    -Preheat the oven to 350 degrees.
    -Lightly grease a 9-by-13-inch pan.
    -To prepare the crust, whisk together flour, sugar and salt in a medium mixing bowl.
    -Using your fingers, a pastry blender, a mixer or a food processor, cut in the butter until crumbly.
    -Add lemon zest and juice.
    -Press the mixture into the bottom of the pan.
    -Bake for 10 to 15 minutes, until lightly browned.
    -Remove from the oven; let cool slightly. Leave the oven on.

    Step 2:
    -While the crust is baking, make the filling.
    -Beat eggs and salt until foamy.
    -Gradually add sugar, beating until the mixture is thick and light yellow.
    -Blend in flour, then fold in rhubarb.

    Step 3:
    -Pour rhubarb mixture over warm crust, return the pan to the oven and bake the bars for 40 to 45 minutes, until lightly browned.
    -For easiest cutting, let cool for several hours. (The top layer separates a bit from the filling when you cut; just press it back lightly.)


    Variation:
    -To make Strawberry-Rhubarb Dreams, substitute hulled, coarsely chopped strawberries for up to half the rhubarb.
